When recipes are formulated they are typically made for the cooking conditions at sea level. Most of the western United States and Canada are at high altitudes so they require some modification. The boiling temperature is lower at higher altitudes so your cook time will need to increase slightly if you are boiling any part of your recipe. You will also need to reduce leavening agents such as baking powder and baking soda while also decreasing the amount of flour in the recipe. Make sure all pans are greased well as this will help in allowing the recipe to not rise too quickly. When using a deep fryer, it is very important to reduce the temperature of the oil by about 15 degrees. The outside may appear done, but this temperature decrease will ensure that your food is cooking thoroughly throughout. Most recipes do contain extra instructions for those that are cooking at higher altitudes so be sure to check the recipe and see if that information is available to you.Since glass baking pans do not conduct heat well, there is no need to increase any temperatures when using glass cookware.
